Good Thunder is a funk, beer washed-rind square similar in style to Reblochon.
Washed weekly for three weeks in Surly Bender Beer, this cheese brings a truly Minnesotan flavor unlike anything you’ve ever had before. Good Thunder will age for about six to eight weeks when refrigerated and as it ages, its flavor will become softer and more funky.
Good Thunder is best spread over fresh bread or sturdy crackers, and pairs well with malty ales and well-seasoned salami.
The taste of Good Thunder is best enjoyed when it's unwrapped and allowed to come to room temperature. We recommend at least a half-hour in the warm months, one hour in the colder ones.
