Sakatah is a seasonal, soft-ripened square wrapped in a Brandy soaked grape leaf. Made with 100% grass fed milk, this cheese leads with spice and peppery notes on the palate and finishes with an earthiness that lingers long after tasting.
Sakatah is our special Autumn cheese, only available in the fall and winter. Similar to a Banon or Le Mothais, Head Cheesemaker Craig Hagemann puts a Minnesota spin on these classic French styles by using a Marquette grape leaf to wrap the cheese - the premier wine grape developed by the University of Minnesota.
Sakatah is a native Dakota term meaning "singing hills", and is also the name of a beloved State Park and multi-use trail in Southern Minnesota near Alemar's original home of Mankato.
Sakatah's flavors are best enjoyed at room temperature.
